Famous Dave's Georgia Chopped Pork Recipe

Famous Dave's Georgia Chopped Pork Recipe

Ingredients
  • 4 large lean Pork Chops
  • 1/4 cup Peanut Butter
  • 1/2 can Mushroom Soup
  • 1/4 cup Milk
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Salt
  • 1/8 teaspoon Pepper

Directions
  1. Brown pork chops.
  2. Pour off fat.
  3. Top each chop with a thick slice of onion.
  4. Mix peanut butter, mushroom soup, milk and seasonings.
  5. Pour mixture over chops.
  6. Cover and cook over low heat for 45 minutes.
  7. Chop the pork chops and serve on buns with Famous Dave's BBQ Sauce.

Famous Dave's Baked Wilbur Beans Recipe

Famous Dave's Baked Wilbur Beans Recipe

Ingredients
  • 8 ounces thick-slice Hickory-Smoked Bacon
  • 1 (8-ounce) Strip Steak
  • Dave's Steak Seasoning to taste
  • 1 (8-ounce) twice-smoked Sausage Link
  • 2 tablespoons Bacon Drippings
  • 1 cup chopped Onion
  • 1/3 cup chopped Green Bell Pepper
  • 1 tablespoon diced Jalapeno
  • 2 (28-ounce) cans Bush's Baked Beans
  • 1 (20-ounce) bottle Famous Dave's BBQ sauce
Directions
  1. Fry bacon in a skillet until crisp. Drain, reserving 2 tablespoons of the drippings.
  2. Crumble the bacon.
  3. Sprinkle steak with steak seasoning.
  4. Grill steak over hot coals until medium. Cut into 1/2-inch cubes.
  5. Grill sausage until nice and charred. Slice the sausage lengthwise into halves; slice into quarters. Cut the quarters into 1/2-inch cubes.
  6. Saute onion, green pepper and jalapeno in reserved bacon drippings in a skillet just until onion is tender-crisp.
  7. Stir in bacon, steak, sausage, beans and sauce.
  8. Simmer over low heat for 30 minutes, stirring occasionally.

The flavor is enhanced if stored, covered, in the refrigerator for 8 to 10 hours and reheated just before serving.

Famous Dave's Shakin the Shack Potato Salad Recipe



Ingredients
  • 3 pounds Russet Potatoes
  • 1 1/4 cups Mayonnaise
  • 1/2 cup Sour Cream
  • 1 tablespoon Mustard
  • 1 tablespoon Vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1/2 teaspoon Pepper
  • 1/2 cup chopped Celery
  • 1/2 cup chopped Red Onion
  • 1/2 cup chopped Green Bell Pepper
  • 2 tablespoons chopped Pimientos
  • 1 tablespoon finely minced Jalapeno, seeded
  • 5 hard-boiled Egg, finely chopped
  • 1/4 cup Pickle Relish
  • Paprika (for garnish)

Directions
  1. Combine the potatoes with enough water to cover in large saucepan.
  2. Bring to a boil.
  3. Boil until tender but not mushy; drain.
  4. Chill in refrigerator.
  5. To Make the Salad
  6. Peel the chilled potatoes and coarsely chop.
  7. Combine mayonnaise, sour cream, mustard, vinegar, salt, sugar and pepper in a bowl and mix well.
  8. Stir in celery, red onion, green pepper, pimento and jalapeno.
  9. Fold in potatoes, eggs and pickle relish.

Chill, covered, until serving time.

The flavor is enhanced if chilled overnight. Garnish with paprika.

Famous Dave`s Legendary Pit Barbecue Ribs Recipe

Famous Dave`s Legendary Pit Barbecue Ribs

Ingredients 

Rib Rub
  • 2 cups packed light Brown Sugar
  • 1 cup Kosher Salt
  • 3/4 cup Sugar
  • 1/2 cup Garlic Seasoning
  • 1/4 cup Chili Powder
  • 1/4 cup Lemon Pepper
  • 1/4 cup Onion Salt
  • 1/4 cup Celery Salt
  • 2 tablespoons coarse ground Black Pepper
  • 2 tablespoons whole Celery Seeds
  • 1 teaspoon crushed Cloves
  • 1 tablespoon Cayenne
  • 1/2 cup Mrs. Dash Original Blend
  • 1/4 cup Salt  

Ribs
  • 2 (4- to 5-pound) racks Spareribs
  • 1/2 cup Italian Salad Dressing
  • 1/2 teaspoon coarse ground Black Pepper
  • 1/2 cup packed Brown Sugar
  • 1 cup minced dried Onion
  • 1 cup Rib Rub (that's the recipe above)
  • A bottle of Famous Dave's BBQ sauce

Directions
  1. First prepare rib rub by thoroughly mixing all rub ingredients and store in airtight container.
  2. The night before smoking, trim your ribs of all excess fat from the ribs.
  3. Place ribs in a large plastic bag and pour in Italian dressing to coat. Seal bag well.
  4. Refrigerate for 4 hours, turning occasionally.
  5. Remove and wipe dressing off.
  6. Sprinkle each rib with pepper then 1/4 cup of the brown sugar and 1/2 cup of the
  7. onion flakes.
  8. Wrap each rib in plastic and refrigerate overnight.
  9. The next morning remove from wrap and wipe sludge off ribs.
  10. Generously coat front and back of ribs with Rib Rub and using your hands, rub seasoning into meat and set aside.
  11. Using a chimney charcoal starter get 15 briquettes red hot.
  12. Place coals on one end of grill and place 1 pound of green hickory around coals. Use water-soaked hickory chunks if you can't get fresh-cut hickory. Keep internal temperature of the grill at 200 to 225 degrees. Add more charcoal and hickory chunks every hour as
  13. needed. The smoking process will take 6 hours.
  14. Place ribs bone side down but not directly over hot coals.
  15. After 3 hours, remove ribs from grill and wrap in aluminum foil.
  16. Hold in covered grill at 180 to 200 degrees for 11/2 to 2 hours or until fork tender.
  17. Next build a real hot bed of coals over the entire bottom of grill. Be careful because this next step goes quickly.
  18. Place ribs back on grill to add char flavor.
  19. When meat becomes bubbly, it is done. Make sure to char off bone side membrane until it becomes papery and disintegrates.
